Yield: 6-8 Pops

  • 12 oz. Fresh or Frozen Pitted Cherries, plus more for (optional) topping
  • ½ C. Coconut Milk, emulsified*
  • 6 oz. Dairy-free Dark Chocolate chips or chunks

  • 6-8 Small Paper Cups
  • 6-8 Wooden Popsicle Sticks

  • Pulse the pudding and cherries in a blender until just combined or blend until smooth, as desired.
  • Divide the pudding mixture into small paper cups and place the sticks.
  • Freeze overnight.
  • Stirring every 30 seconds, melt the dark chocolate in a microwave or a double boiler.
  • Once the pops are fully frozen, tear away the paper cups. Working one at a time, quickly dip the tops into the melted chocolate.
  • Just before the chocolate coating sets, place a cherry on top.

Note: You can find emulsified coconut milk in aseptic cartons at grocery stores. Alternatively, you can use a blender to emulsify the liquid and solid components of canned coconut milk.
